
French Onion Soup is a classic French dish made with caramelized onions and beef broth. It is so good when done right that it warms the soul. The rich, caramelized onions take time, but the rich flavor they deliver make it worth it. Ultimately the soup is topped with croutons and gruyere cheese to delver a heavenly bowl of comfort food.

Ingredients:
- 4 large yellow onions, julienned
- 8 C beef stock or broth
- 1 C dry white wine
- 1 T dry sherry
- 1 T Worcestershire sauce
- 3/4 t salt
- 1 bundle fresh thyme
- 2 bay leaves
- Meat Church BLANCO to taste (sub S&P)
Topping
- 1 fresh baguette to make croutons
- 1/2 C gruyere cheese, grated
- Meat Church Garlic & Herb Seasoning to taste
- 2 T olive oil
Tools
- French onion soup crocks or oven ovenproof bowls
Prepare the onions
Melt the butter in a stock pot or dutch oven over medium heat. Add the onions and salt.

Stir and cover for 5 minutes to soften the onions. Do not leave the lid on for more than 5 minutes as the onions will steam and will not caramelize.

Remove the lid and stir the onions occasionally. Continue until the onions are caramelized. This will take 45 - 60 minutes. Just like making BBQ, patience is key and it will pay off.
Add the white wine to deglaze the pan.

Using a wooden spoon, scrape the brown bits off the bottom of the pan. Continue to cook until the wine is cooked down.
Prepare the soup
Add the beef broth, dry sherry, Worcestershire sauce, thyme and bay leaves.

Bing to a simmer. Simmer for 20 minutes. Remove the herbs.
Season with Meat Church BLANCO to taste.
Prepare the croutons
Slice the baguette into cubes. Place in a large bowl and toss with olive oil and Meat Church Garlic & Herb seasoning.

Place the cubes on a tray. Grate fresh gruyere over the top.

Place the tray in an oven to brown.

Finish the soup
Ladle the soup crocks with the soup.

Top with croutons and grate freshly grated gruyere cheese generously over each crock.

Place in a broiler for 1 - 2 minutes until the cheese melts and browns.
Remove and enjoy!
