Rice is a staple in our household. We add a little Tex Mex twist to a simple rice recipe to make this Cilantro Lime Rice. Also, this rice is a favorite paired with our Carne Guisada.
Ingredients
- 1½ C Basmati Rice (sub jasmine
- 3Â CÂ water
- 2Â T unsalted butter, melted
- 2 T lime juice freshly squeezed
- ½ t salt
- Zest of 1/2 lime
- ½ C cilantro, chopped
Prepare your rice
Add the rice, water, salt and butter to a large saucepan. Bring to a boil, cover the saucepan and reduce heat to low. Simmer for 20 minutes.

Finish your rice
Remove from heat, and fluff the rice with 2 forks. Stir in the lime juice, lime zest and cilantro. Taste for seasoning and adjust with salt as needed.
