I cook hamburgers all sorts of different ways, but a smashburger is probably my favorite burger. The simplicity of this technique allows the beef and the crust you get from the griddle to shine. This can be done on a griddle, flattop or a cast iron skillet. Today we will be using the brand new Loco Griddle in this video.

Steak Ingredients:
- 1 lb 80\20 ground beef
- 1 medium onion, sliced razor thin
- 4 brioche buns
- 4 slices of your favorite cheese.
- 1/3 C butter, melted for the toasted buns
- Meat Church Season All (sub S&P)
Prepare your griddle
Set your griddle at 350 or medium heat. Increase temperature as you cook if you feel the need. I always like to start with a lower temperature, so my food doesn't get away from me.
Prepare the Smashburgers
Roll 4 balls out of the 1 lb package of meat. Set aside.
Using a mandolin slice your onions as thin as possible.
Apply cooking spray or oil to the griddle surface.
Place a circle of the onions about the size of a hamburger bun on the griddle. Use the video above as reference.
Place the hamburger ball on top of the onions. Smash the patty very thin. Season with our Season Salt.
Cook for 3-4 mins. Flip the entire onion and hamburger mix. Immediately top with cheese.
Butter your buns when you flip. I butter both sides of my tops. Toast your buns on the griddle. I also toast the tops of my buns.
Cook the smashburgers an additional 3-4 minutes after the flip or until the cheese is super melted. Slide the smashburgers off the toasted buns.
Top with your favorite condiments and enjoy!
