Pimento Cheese

Pimiento cheese, AKA pimento cheese, is a spread made of shredded cheese, mayonnaise and pimentos that my family has eaten as a sandwich or served on celery all of my life. Both of my grandmothers from Alabama and Tennessee seemed like they always had it on hand. In fact, I feel like every refrigerator in the south has pimiento cheese in it!

After attending The Master's for the first time in 2024, I knew I had to shoot a video on this iconic sandwich that is sold for only $1.50!

I have had a recipe on this website since 2015. However, in 2025 we tested President Carter's wife's recipe up against my recipe and others and it came out on top. Therefore, we present to you Rosalynn Carter's delicious recipe that has two special ingredients; cream cheese and grated onions. Trust me, they just work!

  • 4 C extra sharp cheddar cheese, freshly grated

  • 1 8oz package cream cheese, softened

  • 1/2 C mayo

  • 4 oz diced pimientos

  • 1 T white or yellow onion, grated 

  • Meat Church BLANCO to taste (sub S&P)

  • White bread, crackers or celery for serving

Prepare the pimiento cheese
Mix the first 5 ingredients in a medium mixing bowl. 

Be sure to grate your own cheese as it tastes much better than bagged shredded cheese.

Mix together thoroughly. I find that using a mixer works best to completely incorporate the cream cheese.

Season with Meat Church BLANCO to taste.

Serve on white bread for a sandwich, or on heavy crackers or celery!
