
This delicious chicken fried steak made with venison is a southwestern comfort meal so good that it could be considered a candidate for your last meal on earth.
Don't have venison? No worries. This is traditionally made with beef as you can see in this recipe.

Ingredients
- 1 package Meat Church Chicken Fried Steak Breading (sub seasoned flour)
- 4-6 venison steaks, tenderized
- 3 cups peanut oil
Egg wash ingredients
- 2 eggs
- 1/2 cup beer, milk or buttermilk
Smashed potatoes
- 3 lb gold potatoes (sub russets)
- 5 T, unsalted butter
- 3/4 C, heavy cream
- 5 garlic cloves, peeled
- Meat Church Holy Cow to taste
Cracked pepper gravy ingredients
- ½ C unsalted butter
- 5 T flour
- 2 ½ C milk
- 1 T Kosher Salt
- Meat Church Holy Cow
- Coarse cracked pepper to taste
Prepare your pot
Heat the oil to 350 degrees in a dutch oven or deep, heavy cast iron skillet.
Egg wash
Whisk the eggs. Then add the beer and mix. Set aside.
Batter the steaks
Lightly season the steaks on both sides with Holy Cow.

Coat the steak in the chicken fried steak breading.
Then dip in the egg wash.
Re-coat the steak thoroughly in the breading again. Make sure to press the steaks into the breading to get it coated into the cracks really good.
Cook the steaks
Carefully place the steak in the hot oil.

Flip the steak after a few minutes and repeat on the other side until golden brown.

Allow the steaks to drain on a wire rack on a lined sheet pan. A great way to keep the fried steaks warm while you are continuing to fry the remaining steaks is in a cast iron pan in a 165 degree pit or in an oven on low.
Smashed potatoes
Peel ¾ of the skin off each potato. I leave a little skin on. Cut into 1 – 2” pieces.
Cover with water in a stock pot along with the garlic cloves, bring to a boil for 20 minutes or until the potatoes are tender.
Remove from heat, drain and then smash the potatoes and garlic.
Melt the butter in a small sauce pan and combine with the heavy cream. Reduce by ¼.
Combine this mixture with the smashed potatoes and add any extra butter or sour cream you like. Season with Holy Cow to taste.
Cracked Pepper Gravy
Melt the butter in a medium sauce pan. Whisk in the flour.
Cook until the flour starts to brown.
Slowly add the milk whisking constantly.
Simmer until it thickens and season with Holy Cow. Top with coarse cracked black pepper to taste.
Cracked Pepper Gravy
Plate the chicken fried steak with a big helping of garlic smashed potatoes. Top both with gravy and crack black pepper across the top.
