Beef Party Ribs with Bourbon BBQ Sauce

Brisket on a stick! Party Ribs have been so popular in 2024 that I figured I might as well make them with beef ribs. I paired these with my homemade bourbon BBQ sauce and they were killer!

Prepare the Smoker 
Prepare your smoker to a temperature of 250. In this video we used a Mill Scale offset smoker with post oak. Mesquite, hickory or pecan would also be good choices.

Prepare the ribs
Trim any excess fat from the ribs.

Season all sides each rib with Meat Church Holy Gospel.

Allow the seasoning to adhere for at least 15 minutes, but preferably for 1 hour. 
Smoke the ribs

Place the ribs in the smoker meat side up.

Smoke the ribs until they are a beautiful mahogany color and at least 170 degrees internal temperature  as seen in this video

Remove the ribs from the smoker and place them in a pan. 

Mix in the bbq sauce, honey and pats of butter. Mix and toss the ribs until completely coated.

Cover the pan with aluminum foil.
Return the pan to the smoker and cook until they are tender. In this video that took 2 hours to reach 205 internal temp for a total cook time of 4:30 minutes.

Remove the pan from the smoker. Toss the ribs in the sauce one last time, remove from the pan and allow to cool. Enjoy!!
